\u201cI wanted to carry that on,\u201d said her daughter, Colleen Bentley, who had helped her mom with the catering.<\/p>\n

Bentley did start her own business \u2013 a caf\u00e9 and catering – on Oct. 2, 2017. Since she and her husband love history, she wanted it to have a name in keeping with historical Sayre, as well as remembering her mom\u2019s business. She decided on Celebrations Black Diamond Caf\u00e9, because of the Black Diamond train on the Lehigh Valley Railroad that used to run through Sayre.<\/p>\n

Bentley\u2019s caf\u00e9 is open for breakfast and lunch. She serves items made in house from scratch. She specializes in baked goods and coffee. She also has continued the catering tradition that her mom had. Currently she is open for in house dining, as well as takeout.<\/p>\n

Bentley\u2019s catering includes cakes, appetizers, any kind of pastries and very formal dinners and lunch buffets. She is able to serve up to 400 people.<\/p>\n

Bentley uses local sources for ingredients whenever possible. She shops at the local farmers\u2019 markets in season. <\/p>\n

Most of her ideas for her menu come from traveling. Bentley has been on 25 cruises. She has worked with different chefs through the years and of course had experience with her mom\u2019s catering business. Bentley\u2019s mom was a professional chef so she feels that she has learned from the best.<\/p>\n

\u201cMost of the cookie recipes are mom\u2019s,\u201d said Bentley. \u201cWe love chocolate and peanut butter here!\u201d<\/p>\n

Bentley has four employees who work with her \u2013 Ashlee Barrett, Taylor Ladane, Ari Lewis, and Sidney Wilcox.<\/p>\n

Wilcox is her cake decorator.<\/p>\n

\u201cAnd so much more,\u201d said Bentley. \u201cShe\u2019s out front waiting on customers.\u201d<\/p>\n

Wilcox is self-taught and also went to the Career Center in Towanda taking food preparation courses with Amanda Connell. She did a lot of baking with her grandmother when she was young, but she says she never wanted to decorate cakes!<\/p>\n

\u201cI learned so much from Colleen,\u201d said Wilcox. \u201cI love being part of people\u2019s celebrations.\u201d<\/p>\n

When Bentley was in college, her mom told her she\u2019d never go hungry if she worked in a restaurant. She follows that philosophy today as she feeds her staff daily.<\/p>\n

\u201cI think it\u2019s important for them to get a meal,\u201d said Bentley, who explained that when the caf\u00e9 closes at 2 p.m., everyone gets a great meal.<\/p>\n

Originally located on West Packer Avenue, at the end of 2020 Bentley moved to the corner of Elmer Avenue and Lockhart Street.<\/p>\n

\u201cWe moved just in time for the 36 inches of snow before Christmas,\u201d said Bentley, who stayed open during those days when everyone was stuck. \u201cWe were open for coffee and gift cards. We also gave complimentary soup to the people who came in. We just asked them if they wanted some hot soup because it was so cold and nasty out.\u201d<\/p>\n

Celebrations Black Diamond Caf\u00e9 managed to survive through COVID-19, staying open for takeout, even though their dining in was closed.<\/p>\n

\u201cWe still haven\u2019t raised our prices,\u201d said Bentley.<\/p>\n

\u201cIt\u2019s a nice meeting place with friends. We\u2019re so thrilled that she has a bigger space now,\u201d said Fedele, referring to Bentley\u2019s new location. \u201cThe baked goods are really good. She has a varied menu every day.\u201d<\/p>\n

\u201cHer catering business is excellent as well as her in restaurant dining. It\u2019s always consistent; it\u2019s always good here. She has developed quite a good business,\u201d said Mingos. \u201cWe are all looking forward to the outdoor dining weather permitting on the patio.\u201d<\/p>\n

Since they are located so close to Robert Packer Hospital, much of the staff there came in for take out.<\/p>\n

\u201cWhen we saw how the hospital staff looked every day during the worst of COVID, we knew we had to do something for them,\u201d said Bentley.<\/p>\n

So they wrote encouragements on the take out containers. <\/p>\n

One of them said, \u201cIn a world full of Cheerios, you\u2019re a Fruit Loop!\u201d<\/p>\n

Others said, \u201cIt\u2019s OK to fall apart. Sometimes tacos fall apart and we still love them!\u201d  <\/p>\n

Some were as simple as, \u201cYou rock!\u201d And \u201cYou\u2019re strong!\u201d And \u201cInhale courage; exhale fear.\u201d And \u201cSayre needs you!\u201d<\/p>\n

\u201cIt\u2019s been quite a year watching what everyone\u2019s been through,\u201d said Wilcox.<\/p>\n

Mother\u2019s Day is upon us. Celebrations Black Diamond Caf\u00e9 is having a special breakfast and lunch on the Saturday of Mother\u2019s Day weekend.
